Breakfast Crumble

This recipe has no added sugar because apples have enough natural sugar in them. My kids eat their crumble with fresh cream or yoghurt on top.

I use green apples, and I don’t take the skins off so they get all the fibre and nutrients from the skins too.

The crumble top is made from ground almonds and cinnamon. You could add other seeds and nuts too. Almonds are a great source of healthy fats, fiber, protein, magnesium, manganese, vitamin E and calcium.

INGREDIENTS

2 green apples, diced 1cm cubes

50g (1/2 cup) almond meal

30g cold butter, cut into squares

1 teaspoon cinnamon

METHOD

Pre-heat oven to 180c

Place the apples and a dash of water in a microwave-proof bowl with a lid and cook on high for 4 minutes. Alternatively, cook in a pot on the hob. Cook apples enough to soften them but avoid turning to mush.

In a bowl add the almond meal and cinnamon and stir.

Add butter and use your fingers to rub the butter into almond mixture until it resembles bread crumbs.

Place cooked apples into a baking dish and pour the crumble mixture on top.

Bake for 15 – 17 minutes.

Serve with fresh pouring cream or unsweetened yoghurt.
