Tzatziki

Tzatziki

Tzatziki is the perfect accompaniment with meats, but I especially like it with lamb. It reminds me of Summertime and Greece. Oh to be transported to a Greek Island right now, as I write this, it is mid-winter and pouring with rain here in Auckland.

INGREDIENTS

1 cup greek full-fat unsweetened yoghurt

1/2 cucumber grated or sliced with a peeler

A handful of mint leaves, chopped finely

1 clove of garlic, crushed

1/2 lemon juice & zest

2 tablespoons olive oil

Salt & Pepper

METHOD

Mix all ingredients together.
