Berry Brownie
This dessert is a winner every time I serve it. It looks impressive yet is so simple to make, it feels nice and light to eat, just the perfect something sweet after a dinner party or for a special occasion. I love that it makes the most of the Summer berry season.
INGREDIENTS
SERVES 6
600g mixed berries (strawberries, blueberries, blackberries, boysenberries even pitted fresh cherries will work).
100g 85% dark chocolate (or as high as you prefer to eat)
100g yoghurt or whipped cream
METHOD
Break up chocolate and place in a heat-proof bowl over a pot of gently simmering water, stir with a dry spoon until melted and glossy, set aside to cool slightly.
Alternatively, place chocolate in a dry, microwave-safe bowl. Microwave in 30-second intervals, stir the chocolate with a dry spoon in between each 30-second until all of the chocolate is melted and looks glossy. set aside to cool slightly.
Cut any larger berries, like strawberries and blackberries in half. Lay berries in a lined brownie tin or plate.
Pour over the melted chocolate, trying to cover each berry and the edges.
Place in the fridge for 1 hour or longer.
Place berry brownie on a serving plate, cut into six slices and serve with a dollop of yoghurt or cream.
