Chocolate Fudge

This fudge is my favourite low carb treat, but I can't make it too often because it speaks to me from the freezer.

I also can't take credit for the recipe. It is from this amazing website www.sugarfreelondoner.com so many great recipes I highly recommend it.

INGREDIENTS

200g Nut Butter of choice (I like peanut or almond)

100g dark chocolate (I based carb count on 90%)

100g unsalted butter

2 tablespoons of xylitol (or preferred sweetener)

1 teaspoon vanilla essence

METHOD

Break the chocolate up and place all the ingredients in a heat-proof bowl.

Bring about an inch of water to a simmer in a saucepan.

Set the heat-proof bowl over the saucepan, making sure the water doesn't touch the bottom of the bowl.

Stir the mixture occasionally as it softens, remove the bowl from heat as soon as it is melted, to avoid overheating and the chocolate separating.

Pour the mixture into a container lined with baking paper

Place in freezer till set (30 minutes minimum)

Cut into 16 squares.

Store in freezer.
