Lettuce Wraps
Lettuce wraps are great for a quick lunch.
You can fill them with any of your favourite sandwich fillings.
To remove the leaves off the iceberg lettuce without ripping follow these steps:
STEP ONE cut out the core with a knife
STEP TWO hold the lettuce, base facing up, under the tap, filling each outer leave with water, until it gently expands and falls off.
STEP THREE place leaves on your drying rack to let water drain out.
Here are three of my favourite quick fillings…
Fish Dip & Tomato
2 outer iceberg leaves, washed
80g tin of fish (mackerel, salmon, tuna, sardines)
40g cream cheese
zest & juice of half a lemon
Pinch of paprika
Pinch of chili powder
1 medium tomato diced
Micro-cress for garnish
To make the dip put fish, cream cheese, lemon juice, lemon zest, paprika, salt and pepper in a blender and blend until combined.
Put half the dip in each leaf and top with diced tomato, pinch of chili powder and micro-cress. Fold leaf up and eat.

Chicken, Avocado & bacon
2 outer iceberg leaves, washed
100g chicken ( I usually use leftover roast chicken)
1/2 avocado, sliced
2 rashes of bacon, cooked until crips and chopped.
You could add mayonnaise too if you want.
Put half the chicken in each leaf, top with sliced avocado and bacon bits. Fold leaf up and eat.

Ham, Cheese & Pickle
2 outer iceberg leaves, washed
4 slices of ham (shaved off the bone, not from a packet with added sugar)
30g grated cheese
1 dill pickle (best sugar-free brand is McClure's garlic and dill), chopped
2 tablespoons of mayonnaise
Put half the ham in each leaf, top with grated cheese, chopped pickle and dollop of mayo. Fold up leaf and eat.
