Chocolate Covered Strawberries
Party Winner!
Kids and adults loves these, it’s best to cut the strawberries in half so they can fit in your mouth in one go.
You can choose how dark the chocolate should be depending on your guests.
I usually use 70% or higher. The lower cocoa butter % you use the higher in carbs.
You can also roll in chopped nuts to like; pistachios, hazel nuts or almonds.
This is a great low carb pudding because net carbs in strawberries are so low:
small 0.4g
Med 0.7g
Large 1g
One block (100g) dark chocolate 70-85% will do about 20 strawberries that is about 1.7g carbs in the chocolate, so you are looking at about 1-3g net carbs per strawberry depending on size and cacao %.
INGREDIENTS
20 small size strawberries
100g 70% or higher chocolate
Chopped nuts (optional)
METHOD
Prepare a baking tray or plate with a sheet of baking paper
Break the chocolate up and place in a heat-proof bowl.
Bring about an inch of water to a simmer in a saucepan.
Set the heat-proof bowl over the saucepan, making sure the water doesn’t touch the bottom of the bowl.
Stir chocolate occasionally as it softens, remove the bowl from heat as soon as its melted, to avoid over heating and the chocolate separating, allow to cool a bit so you don’t heat the strawberries.
You can leave the strawberries whole if small, or if large cut in half leaving half the green leaf on each. I think they are easier to eat when you can pop in your mouth in one go.
Dip each strawberry in the chocolate and place on the baking paper.
If using nuts dip strawberry in chocolate and roll in chopped nuts. Place in fridge for minimum 30m or a few hours before you serve.
