Salted Caramel Sauce

I am a chocolate girl!

I can say "No" to most sweet foods, but chocolate is a weakness. Second to chocolate it would have to be salted caramel or even better a combination of the two. Lucky for me both can be part of a low carb even keto way of eating.

Below is my easy salted caramel sauce it can be used on top of a cheesecake, inside a caramel slice, in ice cream or any way you want.

I recommend using Xylitol for the most similar flavour to sugar. Be careful if you have a dog as xylitol can be toxic for dogs.

INGREDIENTS

50g butter
60g xylitol
1 teaspoon of blackstrap molasses
100g double cream
1/4 teaspoon of salt
1/4 teaspoon of xanthan gum

METHOD

Melt butter and xylitol in a small pot on high heat.

Allow to simmer away for about 10m, be careful not to burn. If you have a sugar thermometer, it should reach around 140c.

Have your beater ready.

Take off the heat and add the cream, xanthan gum, and salt. 

As quick as you can start beating with an electric beater until thick.

You can serve on low carb ice cream or layer into semifreddo or use it in the centre of my caramel slice.
