Roast Cauliflower
Cauliflower is my go-to instead of rice or potatoes, and this simple way of roasting it in olive oil, salt & pepper is just perfect!
There are so many options for cauliflower it will become a staple in your house. Also try caulirice or mashed cauliflower.
INGREDIENTS
1 head of cauliflower (approx 100g per person)
3 tablespoons olive oil
1/2 teaspoon salt
5 grinds of black pepper
METHOD
Preheat oven to 180c
Chop the cauliflower into florets.
Place cauliflower in a roasting dish and pour over olive oil and toss to coat.
Sprinkle in salt and pepper
Roast in the oven for 10 minutes, turn and cook a further 10 minutes until golden.
