Grain-Free Muesli

I promise you won’t miss oats in your muesli!

I used this combination of nuts and seeds in mine, but you can use any of your favourite low carb nuts and seeds. I sometimes add pecans, walnuts, macadamia and chia to the mix:

INGREDIENTS

140g/ 1 cup sunflower seeds

120g/ 1 cup pumpkin seeds

130g/ 1 cup almonds

80g/ 1/2 cup Linseeds (if you don't like getting caught in your teeth you can add them in ground, they tend to get mix with the il and make nice coating on the other nuts)

160g/ 1 cup hemp hearts (optional, they are quite $$$)

240g/ 3 cups coconut flakes (or desiccated)

30g/ 1/2 cup freeze-dried black currants (optional, they are quite $$$ but add a nice zing and way less carbs than dried fruit plus packed with vitamin C).

Orange zest from 1 orange

25g/ 1/4 cup of coconut oil

1 teaspoon ground ginger

1 teaspoon cinnamon

1/4 teaspoon of cloves


METHOD

Pre-heat oven to 160c bake.

Get a large baking tray and mix all the nuts, seeds, coconut and freeze dried berries (if using) together. 

Grate the orange zest over the mixture.

Melt coconut oil in small pot over a low heat and mix in the spices.

Pour the oil mixture over the nut granola and stir until all coated.

Bake in oven for 10 minutes, stirring after 5 minutes. 

Per 44g gram serve / Calories 257g / Protein 8.5g / Carbs 4.1g / Fat 22.8g

I usually serve mine with 1 tablespoon raw cacao nibs, 40g of full fat Greek yoghurt and 40g mixed frozen berries defrosted in microwave so all warm and juicy - Net carb count 8.2g
